When Adam sinned, the tree of life was guarded so Adam couldn't live forever in a sinful state. To live forever, do you have to eat just once from the tree of life? or maybe once a week? The way God describes it, it seems to come across that one bite would mean eternity. If this was the case, didn't Adam know of this tree before sinning? If he did, why didn't he eat from it? It does seem a bit odd that God said you may eat from every tree in the garden, except from the tree of knowledge of good and evil. So eating from the tree of life was certainly allowed. It also seems odd how the tree of life isn't mentioned until after the sin.
